Last night we had a wonderful dinner with a lovely Spanish couple we spend time with while down here in Mazatlan, Mexico. We try to keep up our healthy eating habits and when we choose to dine with friends from Spain, it becomes very easy.
Maria goes to the docks to pick up some fresh shrimp and Antonio creates a seasoning of extra virgin olive oil, crushed garlic, and some red pepper flakes. The shrimp are quickly sauteed in his olive oil mix and it served with some rice and a big salad. What could be healthier?

I’m always amazed about how healthy (and delicious) REAL Mexican food can be. Especially the seafood. We travel to Mexico often (these days, we frequently go to ajijic or another of the Lake Chapala towns) and enjoy the food so much more than gringo Mexican with that orange cheese on everything!
